Ishizuchi Kurocha is a rare post-fermented tea from the foothills of Mt. Ishizuchi in Ehime. Steamed leaves are first aerobically fermented with filamentous fungi, then kneaded and moved to anaerobic lactic fermentation under weight. Among Shikoku's three post-fermented teas, it is unique in kneading between the two fermentation stages. We also offer a lot fermented in wooden barrels and then aged for three years, yielding softer acidity, layered roast-fruit notes, and gentle woody nuance.
